Red Velvet Whoopie Pies








Red Velvet Whoopie Pies  
  
      Ingredients


 2 cups all purpose flour
 2 Tbsp. cocoa
 1/2 tsp. baking soda
 1/4 tsp. salt
 1/2 cup butter, softened
 1 cup brown sugar
 1 egg
 1 tsp. vanilla
 1/2 cup buttermilk
 1 oz. red food coloring                   

                                 


 Directions

 1. Preheat oven to 375 degrees.

 2. Line baking sheets with parchment; set aside.

 3. Combine flour, cocoa, soda and salt; set aside. 
In large mixing bowl beat butter on medium to high 30 seconds. 
Beat in sugar until light and fluffy. Beat in egg and vanilla.

 4, Alternately add flour mixture and buttermilk, beating after 
each addition just until combined. Stir in food coloring.

 5. Spoon batter in rounds about 1/2" high on prepared 
baking sheets, allowing 1" between each round.

 6. Bake 8-12 minutes until done. Cool completely on baking sheets.

 Fill with your favorite icing such as cream cheese, buttercream, 
chocolate or marshmallow creme icing.

Blueberry Cookies






 Blueberry Cookies 
  
  
      Ingredients


 2 1/2 cups all-purpose flour
 1 egg
 2 1/2 teaspoons baking powder
 1/2 cup butter
 1/2 cup milk
 1 cup sugar
 2 1/2 cups blueberries
 1/2 teaspoon lemon flavoring            

                                 


 Directions

 1. Mix together by stirring the dry ingredients.

 2. Cream butter and sugar. Add beaten egg, lemon 
flavoring and milk alternately with the flour mixture. 
Fold in blueberries. 

 3. Drop a scoop of cookie dough 1 1/2 inches 
apart on greased cookie sheet .

 4. Bake 12-16 minutes at 375 F.

Chocolate Chip Pecan Cookies








Chocolate Chip Pecan Cookies    
  
  
            
      Ingredients

 1 1/4 cups all-purpose flour 
 1 cup quick-cooking oats 
 1/2 teaspoon baking soda 
 Pinch of salt 
 3/4 cup packed brown sugar 
 1/2 cup granulated sugar 
 1 cup unsalted butter, softened 
 1 large egg 
 1 teaspoon pure vanilla extract 
 1 cup semisweet chocolate chips 
 1/2 cup coarsely chopped pecans                               


 Directions

 1. Preheat the oven to 350°F. 

 2. In a medium mixing bowl, combine the flour, oats, 
baking soda, and salt and set aside

 3. In the mixing bowl combine the sugars and butter 
and mix on medium speed until creamy. 

 4. Add the egg and vanilla and mix until thoroughly incorporated. 

 5. Turn the mixer to medium-low and add the flour mixture 1/4 cup 
at a time, thoroughly mixing after each addition. Add the chocolate 
chips and pecans and mix until just combined.

 6. Spoon the batter using a tablespoon onto ungreased baking sheets, 
spacing them 2 inches apart.

 7. Bake for 15 to 20 minutes or until the edges are golden brown.

 8. Remove the cookies to wire racks to cool.

Applesauce Cookies








Applesauce Cookies    
  
            
       Ingredients


 1 Cup shortening
 2 Cups brown sugar
 2 Eggs
 1/2 Cup cold coffee 
 2 Cups thick applesauce
 3 1/2 Cups flour
 2 Eggs; beaten
 1 Teaspoon soda
 1 Teaspoon salt
 1 Teaspoon cinnamon
 1 Teaspoon nutmeg
 1 Teaspoon cloves
 1 Cup raisins
 1/2 cup chopped nuts       


 Directions

 1. In a large mixing bowl cream shortening and sugar. 
Add eggs, coffee and appplesauce. 

 2. Combine flour,soda, salt and spices. Stir into 
creamed mixture. Stir in raisins and nuts.

 3. Drop on lightly greased cookie sheet. 
Bake at 400 degrees for 9-12 minutes.

Sand Tart Cookies








Sand Tart Cookies    
  
            
       Ingredients


 1/2 cup butter, softened
 1 cup granulated sugar
 1 egg, beaten
 1 3/4 cups sifted flour
 2 teaspoons baking powder
 1 egg white, lightly beaten
 1 tablespoon sugar, mixed with 1/4 teaspoon cinnamon                  


 Directions

  
 1. Cream butter and sugar and stir in well beaten egg. 
Sift flour and baking powder together, blend with creamed 
mixture to make a soft dough. Set in refrigerator to chill. 

 2. When cold, place on well floured board 
(or use powdered sugar), then roll out about 1/8-inch thick. 
Knead in more flour if needed. Cut into decorative shapes 
with cookie cutters. 

 3. Brush with egg white and sprinkle with cinnamon sugar 
mixture. Bake on a lightly greased baking sheet at 275° 
about 20 minutes or until lightly browned.

 4. Makes about 2 dozen cookies.

Pumpkin Cookies







Pumpkin Cookies 
  
            
       Ingredients


2 1/2 cups Flour, All-purpose  
1 tsp. Baking powder  
1 tsp.  Baking soda 
2 tsps. Ground cinnamon  
1/2 tsp. Ground nutmeg 
1/2 tsp. Ground cloves  
1/2 tsp. Salt  
1/2 cup Butter, softened 
1 1/2 cups White sugar 
1 cup Pumpkin puree, canned  
1 Egg 
1 tsp. Vanilla extract 
2 cups Confectioners’ sugar  
3 tbs. Milk  
1 tbs. Melted butter  
1 tsp Vanilla extract           


 Directions
  

 1. Preheat oven to 350 degrees.

 2. In medium mixing bowl and add in baking powder, 
flour, cinnamon, nutmeg, baking soda, salt, and 
ground cloves. Set the mixture aside.

 3. Take a medium bowl, add sugar and butter; cream 
it together. In the mixture of butter, mix in egg, pumpkin, 
and vanilla. Continue beating until becomes creamy. Now 
add in all dry ingredients into it. Spread it evenly over 
cookie sheet by tablespoonful; gradually flatten it.

 4. Let it bake for about 20-25 minutes in the oven. 
Take out and cool down cookies. Now with the help 
of a fork or spoon, drizzle glaze.

5. For making of Glaze: Into a medium bowl, add in milk, 
confectioners’ sugar, vanilla (1tbs.), and melted butter 
(1 tbs.). Mix in more milk if needed, to get desired consistency.



Coconut-Lime Shortbread Cookies








Coconut-Lime Shortbread Cookies 
  
            
       
  Ingredients


1 ¼ cups all purpose flour  
3 tablespoons sugar  
½ cup butter room temperature  
1 teaspoon lime zest  
1 tablespoon lime juice  
2 tablespoons shredded coconut           


 Directions
  

 1. Combine flour, sugar, and shredded coconut in a 
medium mixing bowl  Cut in butter and lime zest until 
the mixture resembles fine crumbs.

 2. Form the mixture into a ball and knead until smooth.  
Roll or pat the dough into a circular loaf shape about 
3 inches wide and 8 inches long.

 3. Cut the loaf into about 16 circles and place them 
about 2 inches apart on a cookie sheet covered in parchment 
paper.

 4. Bake at 325 degrees F for 25 to 30 minutes or until 
bottom of cookie just starts to brown.  Transfer cookies 
still on parchment paper to a wire rack to cool.

Peanut Butter Chocolate Chip Cookies

 Ingredients


 1 Cup brown sugar
 1 Cup white sugar
 1/2 Cup shortening
 1 Cup Peanut Butter 
 2 eggs
 1 teaspoon vanilla
 3 cups flour
 1 teaspoon baking powder
 1 teaspoon soda
                                       1 8 oz pkg. Chocolate chips                                             


 Directions
  
 1. In a mixing bowl cream sugars, shortening and 
peanut butter. Add eggs and vanilla and mix well. 

 2. Combine dry ingredients and stir into creamed mixture. . 

 3. Stir in chocolate chips. 

 4. Drop onto ungreased cookie sheet and bake 
at 350 degrees for 8-10 minutes.

Spanish Peanut Cookies

 Ingredients


 1 Cup brown sugar
 1 Cup sugar
 1 Cup shortening
 2 Eggs 
 1 Teaspoon vanilla
 1 cup Sugar
 1 1/2 Cups flour
 1 Teaspoon soda
 1 Teaspoon cream of tartar
 1/2 Teaspoon salt
 3/4 Cup Coconut
 3 Cups oatmeal
                                      1 lb Salted Spanish peanuts                                    


 Directions
  
 1. In a large mixing bowl, cream sugar with shortening, 
add eggs and vanilla and beat until smooth. 

 2. Combine flour, soda, cream of tartar and salt. 
Add to cream mixture. 

 3. Stir in the coconut, oatmeal and peanuts. 

 4. Drop by the teaspoon on a ungreased cookie sheet 
and bake at 350 degrees for 13-15 minutes.

Oat Cookies Recipe








Ingredients

1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
1 egg
1 cup vegetable oil
1 teaspoon vanilla
3 1/2 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup regular oats, uncooked
1 cup crushed corn flakes
1 cup pecans, chopped

Directions

1. Cream butter, gradually add sugar and beat well with electric mixer. Add egg and beat well. Add oil, vanilla and mix well.

2. Combine and sift flour, soda and salt. Add to creamed mixture. Stir in oats, crushed corn flakes and pecans.

3. Using a scoop, place dough on cookie sheet and press down slightly a fork.

4. Bake at 325 F for 15-20 minutes.

5. Cool slightly for about 5-10 minutes before removing from cookie sheet.
