Belgian Cheese Waffles






  
  
      Ingredients

 2 egg yolks
 2 cups milk
 2 cups all-purpose flour
 1 tablespoon baking powder
 1/2 teaspoon salt
 1/3 cup oil
 2 egg whites, stiffly beaten
                                    1-1/2 cups shredded cheddar cheese                                

                       

                                 
 Directions

 1. Preheat waffle maker.

 2. Put all ingredients except egg whites in a large mixing bowl. 
Beat on low until moistened. Increase to speed to medium, mix 
until smooth. 

 3. By hand, gently fold in beaten egg whites. 

 4. Pour 1/2 cup batter on waffle maker, cook till golden brown.

Spiced Pumpkin Waffles







Spiced Pumpkin Waffles     
  
  
            
      Ingredients


 2 1/2 cups all-purpose flour 
 1 tablespoon baking powder 
 2 teaspoons cinnamon 
 1 teaspoon ginger 
 1/2 teaspoon baking soda 
 1/2 teaspoon salt 
 1/2 teaspoon fresh-ground nutmeg 
 1/4 teaspoon cloves 
 4 large eggs 
 2 cups buttermilk 
 1 cup pumpkin purée 
 1/2 cup dark brown sugar 
 1/4 cup unsalted butter, melted 
 1 teaspoon pure vanilla extract 

                                 


 Directions

 1. Preheat a waffle iron.

 2. In a large mixing bowl combine the flour, baking powder, 
cinnamon, ginger, baking soda, salt, nutmeg. set aside. 

 3. In another large mixing bowl whisk together the eggs, 
buttermilk, pumpkin purée, sugar, butter, and vanilla until smooth. 
While whisking, add the flour mixture and blend until smooth. 

 4. Coat the waffle iron with vegetable oil and cook 
the batter till done.

Banana Walnut Waffles







 Banana Walnut Waffles  
  
            
      Ingredients


 2 cups flour 
 2 tablespoons sugar 
 1 tablespoon baking soda 
 1/2 teaspoon salt 
 2 eggs, lightly beaten 
 6 tablespoons vegetable oil 
 1 cup low fat vanilla yogurt 
 3/4 cup whole milk 
 1 cup banana, mashed 
 1/2 cup walnuts, chopped                  


 Directions

 1. Combine flour, sugar, baking soda, and salt in a mixing 
bowl and stir to mix well. 2. In a separate bowl whisk together 
the eggs and oil and stir into dry ingredients. 3. Stir in yogurt. 
Add milk and stir until mixture is a smooth batter. Stir in 
banana and walnuts until incorporated.

 4. Spoon batter onto a prepared, hot waffle iron. 
Cook for 3-6 minutes or until golden brown.

Ginger-Pumpkin Waffles








Ginger-Pumpkin Waffles  
  
            
       Ingredients


 1 1/4 cups all-purpose flour 
 1 1/2 teaspoons baking powder 
 1/2 teaspoon baking soda 
 1/4 teaspoon salt 
 2 teaspoons fresh ground ginger 
 1/2 teaspoon cinnamon 
 1/4 cup finely chopped crystallized ginger 
 2 large eggs 
 3/4 cup buttermilk 
 1/2 cup pumpkin puree 
 1/2 cup sugar 
 3/4 teaspoon vanilla extract 
 3 tablespoons unsalted butter, melted and slightly cooled               


 Directions


 1. In a large mixing bowl combine flour, baking powder, 
baking soda, salt, ground ginger, and cinnamon.

 2. Remove 2 tablespoons of the flour mixture and toss 
with crystallized ginger in a small bowl. Set aside. 

 3. In a medium mixing bowl whisk eggs, buttermilk,
 pumpkin, sugar, and vanilla. 

 4. Combine with flour mixture. Stir in butter and fold in 
reserved crystallized-ginger mixture. Do not overmix.

 5. Heat a waffle iron, using about 1/2 cup batter per
 each waffle.

Apple Cinnamon Waffles








Apple Cinnamon Waffles 
  
            
       Ingredients


 2 cups all-purpose flour
 3 Tablespoons sugar
 2 teaspoons baking powder
 1/2 teaspoon salt
 2 large eggs - separated
 1 1/4 cups milk
 1/3 cup vegetable oil
 1 apple - finely sliced
 2 teaspoons cinnamon


 Directions

1. Sift together flour, sugar, baking powder, and salt.

 2. In a small mixing bowl, beat egg whites until stiff.

 3. In a medium bowl, beat egg yolks well. Stir in milk. 
Add sifted ingredients to egg yolks and mix until moistened 
(do not to over mix). 

 4. Add vegetable oil. Fold in egg whites. Pour cinnamon 
in mixture. Stir. Add the apples. Blend lightly into mixture.

 5. Bake in preheated waffle maker for 4 to 6 minutes or 
until the waffle is golden brown.

Maple Bacon Waffles







Maple Bacon Waffles 
            
       
  
 Ingredients


 6-8 slices of bacon - cooked and crumbled
 2 cups all-purpose flour
 2 teaspoons baking powder
 3/4 teaspoon salt
 1 1/3 cups milk
 2 large eggs - lightly beaten
 2 Tablespoons pure maple syrup
                                            2 Tablespoons butter - melted                                                


 Directions
  
 1. In a mixing bowl, mix together the flour, 
baking powder and salt. 

 2. In a separate mixing bowl, beat together the milk,
 eggs, syrup and butter. Add liquid mixture to dry 
ingredients, stirring just until blended. 

 3. Pour batter onto center of hot waffle iron. Sprinkle 
each waffle with some of the bacon crumbles. 
Bake about 4-6 minutes. 

 4. Serve waffles with butter and maple syrup.

Gingerbread Waffles



Gingerbread Waffles
  
Ingredients

 3 large eggs
 1/4 cup sugar
 1/2 cup molasses
 1 cup buttermilk
 1 1/2 cups all-purpose flour
 1 teaspoon ground ginger
 1/2 teaspoon ground cinnamon
 1/2 teaspoon ground cloves
 1/2 teaspoon salt
 1 teaspoon baking soda
 1 teaspoon baking powder
 1 stick butter - melted                


 Directions
  
 1. In a small mixing bowl, beat the eggs until light and frothy. 
Add sugar, molasses and buttermilk, then beat very well.

 2. In a large mixing bowl, sift together the flour, ginger, cinnamon, 
cloves, salt, baking soda and baking powder. Add to batter and stir 
until smooth, then add butter and combine.

 3. Spoon batter onto a prepared, preheated waffle iron. 
Cook for 4-6 minutes or until golden brown.
