2 to 3 tablespoons vegetable oil 2 cloves garlic, chopped 1 red bell pepper, seeded and sliced lengthwise into 1/2- inch strips 1 green bell pepper, seeded and sliced lengthwise into 1/2-inch strips 1 yellow bell pepper, seeded and sliced lengthwise into 1/2-inch strips 1 yellow onion, sliced crosswise into rings 1 tablespoon chopped fresh basil, or 1 teaspoon dried basil 1 chicken (3 to 3 1/2 pounds), cut into serving pieces 1/2 teaspoon salt Freshly ground pepper to taste |
Directions |
1. PREHEAT oven to 350°F. In a large skillet over medium heat, warm 2 tablespoons of oil. Add garlic, peppers, and onion and sauté until tender-crisp, about 6-8 minutes. 2. ADD seasonings and sauté until flavors are blended, 2 to 3 minutes longer. Remove to a plate and set aside. 3. IN same skillet over medium-high heat, warm remaining 1 tablespoon oil. Brown chicken about 5-7 minutes on each side. Season with salt and pepper. 4. PLACE chicken in a 7 1/2-by-11 3/4-inch baking dish lightly coated with cooking spray or oil. Cover and bake 45 minutes. Uncover and top chicken with pepper mixture. Bake, uncovered, until chicken is no longer pink in the center, 15 to 20 minutes longer. |
