Crock Pot Shrimp and Vegetable Soup Recipe

Crock Pot Shrimp and Vegetable Soup


1 can (14 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
2 cups vegetable broth or Homemade stock
1/2 cup orange juice
2 cups sliced mushrooms
1/2 cup chopped onion
1/2 cup chopped green bell pepper
3 cloves garlic, minced
2 strips orange zest (3 in. long)
2 bay leaves
3/4 teaspoon dried marjoram
1/2 teaspoon crushed fennel seeds
1 pound Med. shrimp, peeled, deveined
Salt and pepper, to taste


Combine all ingredients, except shrimp, salt, and pepper, in crock pot; cover and cook on high 3 to 4 hours, adding shrimp last 10-15 minutes. Remove and discard bay leaves; season to taste with salt and pepper.
