Blackberry Gingerbread Waffles
| Ingredients |
2 cups all purpose flour 3 teaspoons baking powder 1 1/2 teaspoons ground ginger 3 eggs 4 tablespoons butter, melted 1 cup buttermilk 4 tablespoons molasses 1/2 cup blackberries |
| Directions |
| 1. Preheat waffle iron. In a large mixing bowl, mix flour, baking powder, and ginger. 2. In a separate mixing bowl, beat eggs, butter, buttermilk, and molasses. Stir the egg mixture into the flour mixture and mix just until moistened. 3. Fold in blackberries. Pour mixture onto prepared waffle iron and cook until golden brown. |

Blueberry Waffles

2 cups all-purpose flour 1 1/3 cups milk 1 cup fresh blueberries 1/3 cup melted butter 2 large eggs 4 teaspoons sugar 2 teaspoons baking powder Pinch of salt |

| 1. Separate egg yolks and whites. Beat egg whites until stiff peaks form. 2. In a mixing bowl, add egg yolks, milk and butter. Stir well. 3. Sift all dry ingredients together in a large mixing bowl. Add the yolk, milk, butter mixture and whisk until very smooth. 4. Gently fold in the blueberries, next fold in the egg whites. 5. Preheat waffle iron, set it to medium to high heat. Cook till golden brown. |

1. Separate the eggs into two separate bowls.
2. In a mixing bowl beat egg yolks until they turn a
light lemon color.
3. Add all other ingredients, except whites to the
yolks and mix until well blended.
4. Beat the egg whites until soft peaks form.
Fold in egg whites gently.

Belgian Cheese Waffles
Ingredients
2 egg yolks
2 cups milk
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup oil
2 egg whites, stiffly beaten
1-1/2 cups shredded cheddar cheese
Directions
1. Preheat waffle maker.
2. Put all ingredients except egg whites in a large mixing bowl.
Beat on low until moistened. Increase to speed to medium, mix
until smooth.
3. By hand, gently fold in beaten egg whites.
4. Pour 1/2 cup batter on waffle maker, cook till golden brown.

2 1/2 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon baking soda

1/2 teaspoon fresh-ground nutmeg
1/4 teaspoon cloves
4 large eggs
2 cups buttermilk
1 cup pumpkin purée
1/2 cup dark brown sugar
1/4 cup unsalted butter, melted
1 teaspoon pure vanilla extract
Directions
1. Preheat a waffle iron.
2. In a large mixing bowl combine the flour, baking powder,
cinnamon, ginger, baking soda, salt, nutmeg. set aside.
3. In another large mixing bowl whisk together the eggs,
buttermilk, pumpkin purée, sugar, butter, and vanilla until smooth.
While whisking, add the flour mixture and blend until smooth.
4. Coat the waffle iron with vegetable oil and cook
the batter till done.

3/4 cup whole milk
1 cup banana, mashed
1/2 cup walnuts, chopped

the eggs and oil and stir into dry ingredients. 3. Stir in yogurt.
Add milk and stir until mixture is a smooth batter. Stir in
banana and walnuts until incorporated.

Cook for 3-6 minutes or until golden brown.

1 large egg
1 cup milk
1 cup sour cream
1 Tablespoon butter - melted
2 cups Bisquick baking mix
6-8 bacon strips; cooked and crumbled
1 cup shredded Sharp or Mild Cheddar cheese
Directions
1. In a medium mixing bowl, beat the egg.
2. Add the milk, sour cream and melted butter.
Add the baking mix and mix very well.
3. Fold in the crumbled bacon and the Cheddar cheese.
4. Spoon batter onto a prepared, hot waffle iron.
Cook for 4-6 minutes or until golden brown.n.

Apple Oatmeal Waffles
Ingredients
1 1/2 cups all-purpose flour
1 cup rolled oats
1 teaspoon baking powder
1 1/2 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
2 large eggs
1 1/2 cup buttermilk
4 tablespoons vegetable oil
2 tablespoons honey
1/2 teaspoon vanilla extract
1 large Granny Smith apple, grated
Directions
1. In a mixing bowl stir together flour, oats, baking powder,
cinnamon, baking soda, salt and nutmeg. Set aside.
2. In a separate mixing bowl Beat eggs; stir in buttermilk,
oil, brown sugar or honey, and vanilla.
3. Add liquid mixture to dry ingredients, stirring just until blended.
Fold in the grated apple. Cover and let batter sit for
45 mins.-60 mins. before using.
4. Pour batter onto center of hot waffle iron.
Bake about 4-6 minutes.
Makes about 4-6 serving.

1 cup all-purpose flour

1 egg - separated (beat egg white until stiff)
1 cup sour cream
1/4 cup milk
1/4 cup butter - melted
1 ripe banana - mashed
Directions
1. In a mixing bowl stir together flour, sugar,
baking powder, baking soda and salt. Set aside.
2. In separate mixing bowl, whisk together egg yolk,
sour cream, milk, butter and banana. Add liquid
mixture to dry ingredients, stirring just until blended.
3. Fold in beaten egg white.
4. Pour batter onto center of hot waffle iron.
Bake about 4-6 minutes.
Makes about 4 serving.
