Caribbean Style Chicken

Caribbean Style Chicken


 1 4 to 5 lb chicken
 1 Tablespoon brown sugar
 1 tablespoon ground allspice
 1 teaspoon ground cinnamon
 2 teaspoons Sea salt
 1/4 - 1/2 teaspoon cayenne pepper
 Fresh Lime juice from 3-4 limes            


 1. In a small mixing bowl, combine the sugar and all the
seasonings. Mix well.

 2. Rub the spice mixture on the inside and outside of the chicken.
Place chicken in the crock pot.

 3. Pour the fresh squeezed lime juice over the chicken.

 4. Cover, and cook on low for 6 to 7 hours. Serve with
hot cooked rice.
