1 1⁄3 cups water
2⁄3 cup apple juice
1⁄2 cup canned or fresh pumpkin
1⁄3 cup chopped dried apples
1 1⁄4 cups quick-cooking oats
1 tablespoon packed brown sugar
1 teaspoon ground cinnamon
1⁄4 teaspoon ground nutmeg
1. In a medium saucepan combine the water, apple juice,
pumpkin, and dried apples. Bring to a boil.
2. In a small bowl combine oats, brown sugar, 1 teaspoon
cinnamon, and nutmeg.
3. Stir oat mixture into boiling pumpkin mixture.
Cook for 1 minute, stirring occasionally.
4. Top with yogurt or with additional cinnamon.
