Apple Bacon Muffins

      Apple Bacon Muffins       

 1/2 cup cooked bacon, diced and drained
 3/4 cup apple, finely chopped 
 1/2 cup butter, softened
 1/2 cup packed brown sugar
 2 large eggs
 2 teaspoons baking powder
 1/2 teaspoon salt
 2 cups all-purpose flour
 2 tablespoons cinnamon
                              2/3 cup milk                                    

 1. Pre heat the oven to 375°. Spray muffin 
cups with nonstick cooking spray.

 2. In a large mixing bowl use electric mixer to 
cream butter and brown sugar until light. 
Beat in the eggs until well blended.

 3. Combine the flour, baking powder, salt, and 
cinnamon. Add to the creamed mixture, alternating 
with the milk. Stir just until blended. Fold in the apple 
and bacon until well blended. 

 4. Spoon the muffin mix into the prepared pan, 
filling the cups about 3/4 full. Bake for 18 to 20 minutes, 
until lightly browned.
