Coconut Shrimp

            Coconut Shrimp         

 2 lbs large shrimp, peeled and deveined
 1/2 cup self-rising flour
 1 1/2 cups self-rising flour
 1 (12 oz.) can beer
 1/2 teaspoon paprika
 1/2 teaspoon curry powder
 1/4 teaspoon sea salt
 1/4 teaspoon cayenne pepper
 1 (14 oz.) pkg. sweetened flaked coconut
                                 Vegetable oil                                     

 1. Combine 1 1/2 cups flour, beer and next 5 ingredients 
in large mixing bowl. Mix well, should be the consistency of 
pancake batter. You add more liquid if necessary. 

 2. Dredge shrimp in the 1/2 cup flour Dip in beer batter 
and roll in coconut , make sure they all well coated. 

 3. Fry coated shrimp in deep hot oil (350 degrees) 
until coconut is golden brown.
