Creole Pork Chops with Rice  

 4 pork chops
 1-2 Tablespoons oil
 1 Cup yellow onion, diced
 1 Cup celery, diced
 1 Cup rice, uncooked
 1 Large (29-oz.) can tomato sauce
 15-oz. can diced tomatoes
                                                          Salt and Black pepper to taste                                                        


 1. In a skillet over medium heat, cook pork chops in 
oil until brown but not cooked all the way through.

 2. Add onion, celery and uncooked rice; stir in all 
remaining ingredients.

 3. Reduce heat to low. Cover and simmer until rice is tender, 
about 15 to 25 minutes, adding water as needed.
