Dijon Grilled Catfish

Dijon Grilled Catfish   

 1 1/2 to 2 lbs catfish fillets
 1 Tablespoon olive oil
 1 Tablespoon Dijon mustard 
 2 Teaspoon fresh lemon juice 
 1 Teaspoon black pepper
 salt to taste           

 1. Oil the grill grates or a fish basket and prepare grill 
to medium-high heat. Sprinkle fish with salt to taste. 

 2. In a mixing bowl, whisk together the olive oil, mustard, 
lemon juice, and black pepper. Spread this mixture on fillets 
covereing well.

 3. Place fish fillets on pre heated grate (or in fish basket) 
over indirect heat, cover grill, and cook until fillets are opaque 
and flake easily, turning once during cooking time. 
This should take a total of about 10 to 15 minutes depending 
on the thickness of fillets.
