Sweet and Sour Red Cabbage

Sweet and Sour Red Cabbage  

 1 large onion, chopped
 3 to 4 tablespoons bacon drippings 
 1 medium-sized head red cabbage
 1/2 cup cider vinegar
 1/3 cup sugar
                                                         Salt and Pepper to taste                                                              


 1. Saute onions in drippings in a large pan

 2. Finely cut cabbage and add to onion. 
Add vinegar, sugar and salt.

 3. Simmer 45 mins. to 1 hour; do not overcook. 
Sprinkle with pepper before serving.
