Lima Bean Buttermilk Soup

 Lima Bean Buttermilk Soup

 1 tablespoon olive oil
 1 sweet onion, peeled and chopped
 4 cups fresh lima beans
 4 cups vegetable stock
 1 1/2 cups buttermilk
 1/2 teaspoon garlic salt
 1/2 teaspoon black pepper
 Bacon bits for garnish         



 1. Pour the oil in a large skillet over mediumhigh heat. 
When hot, add the onions and cook for 5-6 minutes, 
stirring frequently.

 2. Place the beans, stock, buttermilk, garlic salt, and 
pepper in a lightly greased medium to large slow cooker.

 3. Add the onions and pan drippings. Cover and cook 
on low for 4 hours. 

 4. Serve warm with a garnish of bacon bits.
